Lava Cake

I had a craving for some lava cake a few weeks ago so I finally decided to try to make some and to my surprise they were super easy to make! It's also a great dessert to make if you want to impress your hunny! Jensen loved them, but he loves chocolate more than any person I know and he's not picky so he's probably not the best judge of how good they are. They're delicious, look super fancy, and really easy to make. They're even better when topped with a little powdered sugar, vanilla ice cream, or whipped cream. Yum!!!
I adapted my recipe from Paul Deen's Molten Lava Cake.

Ingredients
  • 1 cup semi-sweet chocolate chips
  • 10 tablespoons (1 1/4 stick butter)
  • 1/2 cup all-purpose flour
  • 1 1/2 cups confectioners' sugar
  • 3 large eggs
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Directions
Preheat oven to 400 degrees F.

Grease 6 (6-ounce) ramekins. ** Melt the chocolate chips and butter in the microwave, at thirty second intervals, stirring each time. Add the flour, sugar, and salt to the chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla. Divide the batter evenly among the ramekins. Place in the oven and bake for 12-14 minutes. The edges should be firm, but the center will by runny. Run a knife around the edges to loosen and invert onto dessert plates. Enjoy!

** I don't have any ramekins, so I just used my small pyrex round dishes and they worked great. I'm sure a large muffin pan would work as well, it would just be harder to invert onto individual plates.
